Notice I numbered this post because I won't overload you with all the recipes I have tried and liked that I found on Pinterest. So today's post includes three recipes I have tried and definitely will keep in my
limited repertoire of recipes. A few weeks ago, I got a little crazy and decided instead of purchasing my boys' favorite snacks, I would make them. It was a little experiment of money and taste. I purchase most of the boys snacks from Trader Joe's so I am fairly confident that the ingredients in those snacks are safe. But they are so picky about their faves, I wanted to see if they would enjoy the homemade as much as the store bought. I also wanted to see if I could save some money making their snacks.
- I found a homemade chewy granola bar recipe. I'll tell you the truth, it took me 3 times before they came out as granola bars. The first two times the batch became granola for Jeremy and I to snack on because it fell apart. Third time was the charm. This time around I melted the butter on very low heat and mixed everything except for the chocolate chips in a large skillet. They came out spectacular! The boys LOVED them. And by "boys" I mean all 3 of them in this house! I did to! I made them with all organic ingredients and Earth Balance "butter" which made them only slightly cheaper than the store bought alternative. But the taste was pretty dead on to the packaged granola bars.
- The second favorite snack in our house are fruit (cereal/Nutri Grain) bars. I knew I couldn't duplicate them completely but I did find a recipe that looked pretty close (Homemade Nutri Grain Bars). Again I used all organic ingredients, white whole wheat substituted for the white flour and also used Crofter's fruit spread which is all fruit and no sugar. These were fantastic. I LOVED them, Jeremy LOVED them, Evan liked them and Carter wouldn't eat more than half a bar at a time. Although I didn't think they tasted like fruit bars, they were delish. It ends up that Trader Joe's fruit bars are actually much cheaper. But I will definitely make these again - almost even for a dessert. YUMMY!
- And the last one I will share today is a recipe that even just 6 month ago I would be skeptical about. I LOVE my beef. But the last month or so, I have tried to do more bean recipes and not as much beef and chicken recipes. So when I found this Black Bean burger on Pinterest, I thought I would step out of my comfort zone and try them. I even teased fate by making them for us and another couple before even trying them. They turned out great! I didn't tell Evan that anything was different and made his "burger" just like I always do. He ate it and didn't even question there was anything different with his burger (hee hee). My photo isn't the best but I will share it just to prove that I did make them ;-).
